Bike buying isn't a hobby for me, but wrenching and riding are hobbies.
My kids are grown.
We have a second home, and my wife is in charge of the renovations. She has been doing some major renovations over the last six years. I help out some. And there is always cooking and cleaning for me to do. When the renovation projects are settled down, we hope to get into gardening.
I'm also a semi-professional singer, and I'm in at least six concerts a year, so that takes some time.
And I still work full time. At the rate I'm saving, I may not be able to retire until I'm 85. I'm 57 now.

Golden age (1940s-1950s) comic books and WWII era battle rifles. Each hobby ebbs and flows depending on various things. I'm contemplating selling off a bit in each of those hobbies.
Related to the above - book publishing. I have a small publisher that I publish restored works from golden age comics and WWII, but that has been on the "ebb" side of the equation the last couple years. I've starting to lay some plans to get that started again though.

Between bikes and child rearing I home brew beer.
It's nice when bikes and beer come together, like a recovery ale after a long ride.
While they are quite separate activities, there's a strange commonality that sometimes the process and anticipation (eg; mashing/boiling or building/servicing) is more enjoyable than the outcome (eg; drinking or riding.) But not always.

Riding gets in the way for me too 
I'm not much of a buyer. That's partly why I'm into C&V in the first place! Never got rid of the old stuff.
Besides that too many hobbies to list. Guitars and guitar making, hifi, music, drawing, woodwork.

Not a hobby, but I’m surprised that I am the first to say a new girlfriend, since August 2017.
Had a great summer racing aboard a J111 too. Definitely not C&V, just raw speed. Unfortunately Lake St. Clair is not that reliable for heavy air, as depicted below.

Honestly, if I didn't have a job that has a huge storeroom and a lot of loosely-structured time, I'd have only one vintage bicycle (the one I bought 35 years ago) and no modern ones. There's no room at home for that nonsense. If/when I retire, I'm by necessity going to have to reduce the fleet by at least 2/3rds or build a really big shed on my acreage.
When that happens, I'm sort of looking forward to getting back into building guitars, painting pictures and making beer, none of which I can do at work, especially with all these half-built bike projects cluttering up the place. Enough, already!

Not really a hobby but I have been a chauffeur for the with all their activities for at least 16 yrs. Down to the last two kids at home so there's light at the end of the tunnel. That alone takes up a ton of my time. Outside of that my spring and summers are often interrupted by my softball coaching duties although that is getting less and less these days. Finally, there's my 1965 Falcon and starting of a new Falcon Club of America chapter in our area. Sometimes I wonder how I even have time for bikes.

Restoring my 1977 Trillium vintage egg camper has gotten in the way of bike collecting lately. I'm about half way done. Since this picture, the marker lights have been repaired along with inside cushions and lighting. If you know about egg trailers, you will notice the door sag, which is on the list to repair.

If I collected anything else, especially in large numbers, I'd spend all my time arranging and rearranging it. I did it with LP's and 8-tracks, then cassettes, then CD's. I do it with bike parts and bikes. Confined like that, that particular OCD does not interfere with my life (as much). Heaven help me if I fished.
This used to be the only hobby I had, outside of bikes, and I enjoyed it to no end.
