The GAP and C&O combination is unpaved and has shelter options from stealth camping to hike in bike in camp sites to regular hotels so you can go as scruffy or as Muffy as you please. Each end is a good transportation hub as well so access options are numerous.

For a warmup you could do The Columbia and western railtrail combined with the Kettle Valley Railtrail in British Columbia. Check it out.

With slight modifications to routing. Longest stretch without power is 135 miles. I can wring that out of the 2,540 watt hours available if I don't have a headwind and ride carefully. I can charge up to pretty full in two hours from near empty.
