There doesn't seem to be a huge consensus so I am leaning towards the Aardvark.Based on the packaging it comes in two sizes - Regular and Small. Do any of you know which size is likely to fit a Brooks Swift or B17? I also never got a good indication of what material the Aardvark is made out of. For those of you that have them is it just coated nylon or something thicker like neoprene (wet suit material)?
For completeness I thought that I would document what other options that I have been able to find online. Unfortunately there is limited information on sizing and material available and if it has built-in gel/padding.

I bought a Aardvark in Standard size. It appears and smells like it is made out of a thin neoprene with a thin, probably lycra, fabric cover on each side. It fits on a brooks Swift and Infinity E1X. It will be interesting to see how this works and holds up. The stretchy-ness makes it ride up off the saddle since the saddle is concave. I'll post a photo below. Thanks for everyone's input.
BTW, the Selle Anatomica cover appears to be a custom Aardvark and is not the same as the "Standard". The packaging is marked "Deluxe" on a sticker covering the "standard" and "small" markings on the package.

The Aardvark seat cover doesn't protect the underside of the saddle, it appears.

Been using a leather Sella Italia saddle for 13 years and it’s still fine with no cover or owt. That thing has seen a lot of sweat as it’s on my turbo now. Can’t really see the point of getting a saddle of one material and covering it with a different material when using it to be honest (generating more landfill in the process)? Though the idea above sounds a good one.

Selle Italia saddles have a leather cover over a plastic base, which limits the damage that moisture can cause. I took the OP's question as referring to leather sling-type saddles like Brooks, Sella Anatomica, Giles Berthoud, etc. Riding them with excessive moisture causes them to stretch and sag. I use mudguards to keep water away from the underside of the saddle and keep a plastic bag stuffed under the saddle in case I get caught in rain. For the sweat issue the OP mentions, perhaps fabricating a cover from Gore-Tex fabric and elastic might work.
