I'd imagine that is more towards the fact that even top end bikes aren't all that expensive (yes, I know what is expensive is relative, but on a general scale of things $10k isn't an unreachable goal for much of the population), if one really wants a newly manufactured bike they are generally capable of simply walking to the Trek/Specialized/C'dale/etc dealer and buying one. Dream bikes therefore skew towards the rare and unique.
Also, there isn't much time for a newly manufactured bike to become a dream bike. You'll always have a new dream bike a year later when the new ones come out, I seriously doubt the 2018 model years will be the pinnacle and you'd never want a 2019. Something like that Masi is something you could have been lusting over since 1979.

My dream bike must be a 2016 Catrike 559 because I have no dreams about acquiring anything different. There's no point in showing a photo because it's all dirty and covered with Katy Trail dust.

Fully and completely restored, better than new.
And then once or twice a year, I'd wake up at 3-4am, take her down the street, real gentle.
Ride up to the other side of town when it starts to ramp upwards a bit, taking my time and enjoying the silence.
Then once I'd got to the top, I'd get down in the drops and come back down FULL PELT.
About 2 miles of straight road with a slight incline.
Then slow down for the traffic lights, and slowly ride her home.
Give her a quick clean, regardless of weather she needed it, and then straight back to bed with a smile on my face.
Fully and completely restored, better than new.

Back in the '80's there was a Basso frame I loved. Too many to even imagine what would be ideal but I'm pretty sure it would be Italian.....DeRosa, Colnago, Masi, et. al.

I have my dream bike. A 2015 Charge Plug (last year for steel frame) outfitted for commuting. I can't imagine finding anything more comfortable or that handles better for how I ride; and I compared a ton of bikes. I bought it new for the "pinch me I must be dreaming" price of only $550.

I bought the plug at Performance Bicycle on special for $550. I will reiterate that from 2016 forward the bikes are aluminum, not steel... except for the plug 5 which is titanium. The rear of the frame where the Axel and disc break go is also shaped differently now. I wasn't really interested in how it looked when I bought it, I really had a specific feel in mind, halfway between my mountain bike and my old steel road bike but with a slightly more relaxed geometry. Been riding my dream bike's for 24 years, two Zipp2001 frames. I have one set up as a single speed and one as a time trial bike. I still love throwing my leg over the beam and always wearing a smile, best machines I've ever owned.

Pocket money? No, but that is why I tried to take care with my words. I've got plenty of friends with motorcycles and ATVs and race cars at or in excess of $10k, if it is something of a dream toy, it isn't an unrealistic amount of money to obtain with some work. Not nearly as difficult as coming up with $400k for a new Ford GT, at least!

I've spent many a weekend on our yard, but I don't think I've spent even near $10k in the last 10 years...
I've spent maybe ~$1000 on my two bikes that count (for me anyway) in the last 10 years.
Both the yard and the bikes make me happy (and the yard makes her happy, which is the key to a happy life )

I ride an '84 Peugeot PH10 that I bought new. Never thought about replacing it with any thing else so I guess I already have my dream bike.
