Classic Rims, Maybe Even Vintage Rims
Who makes them, new production, 700C, clincher rims in the classic style - polished aluminum, ferruled spoke holes, etc.
I corresponding question, who makes spokes - stainless, butted?
Finally, does anyone sell top quality, pre-built wheels using the components described above? I use a 120 mm rear spacing and an English-threaded, 5 speed freewheel.
I used to know who to go to and what to buy but not anymore. We lost Performance Bike, Bikecology, Nashbar,.., everyone I knew and would have gone to is gone.
I am currently riding a pair of wheels I bought from Performance in about 1987 (?). I have had zero, and I do mean ZERO!, issues with them.

If you want new wheels built to vintage specifications (aka "obsolete"), you'll have to find a vintage friendly bike shop.
In Southern California (Long Beach) I recommend: https://www.thebicyclestand.org
You will likely have to buy a New Old Stock hub, or supply one for the wheel build. DT and Sapim make stainless spokes. For rims, check H Plus Son, Pacenti, Soma, Velo Orange, and Cycles Grand Bois in Japan.

I have built several sets of wheels with SUN M13 II 700C rims with stainless steel plain gauge spokes on vintage hubs. Stainless steel butted spokes are still being manufactured as well.
Vintage style wheels or bikes are not "obsolete" as the previous poster suggested. They are still widely used and are viable alternatives to the over-engineered bikes currently being produced

I agree the Sun rim is an excellent choice.

For 700C, Sun is my go-to choice: they look great, seem to be good quality, and are reasonably priced at about $30 or so per rim. The M13-II is for narrower tires, while the CR-18 is for wider tires.

This is on my latest rebuild of my 1985 Trek 620:
The Golden Boy's 1985 Trek Re-Rebuild!!!
The hub is a 10 speed Phil hub, spaced at 130, and I think I've got something like a 12-30 SRAM cassette on it. The rim is a 700C Pacenti Brevet. The front is a Pacenti Brevet rim with a SON generator hub.

I have a pair of Campagnolo Record hubs I'd like to use. 120 mm rear spacing is what I currently have.
Here's an issue for those who know. I am after a replacement for MAVIC MA-2 rims. I've seen several current production rims that are in the style of the MA-2 but the rim and the braking surfaces are taller, which I don't care for. Does anyone make a duplicate of the MA-2 or which is closest?
I am also after a rim as wide as the MA-2 (not wider or narrower). The tires I use are 25mm up front and 28 mm in the rear.
Funny, I view "obsolete" as a badge of HONOR!

Give Wayne Bingham at Velo Classique a shout. Last time I was there he had piles of NOS older rims.

the MA2 rim is obsolete in section.
I agree the new all appear taller.
Nisi Sludi? I saw some new production that looked interesting. Called the Nisi Sludi 390, low profile. I have not tried them yet.
Think as close as you can get to a MA2
Pacenti rim is nice, but wider a tad.

I just don't like the chamfered top surface on the Sun rims. I have a polished set, nice enough but just not attractive.

Maybe noted already and I missed it….. the Sun M13 rims can be found with a nice polished finish, which (IMO) has a nicer/retro/vintage look. The sticker is another story (but easily removed).

I was on a budget and used CR18s. I continue to use the 700c x 28 (nominal) tires I've used since 1972. My previous rims were Rigida 1320. I wish I had used M13-IIs. YMMV.
The CR18s stay the way they were built. I'd say they stay true, but I built the wheels, and they just aren't close to perfectly true. They haven't gotten much less true over 4,000-5,000. But I think the M13s look better.

The cheapest prices on Sapim Race SS DB spokes for my most recent build were from bikehubstore.com. I think they were 80¢ or so…

Okay, thanks for the price checks. At the prices I quoted the rims and spokes plus tax and shipping have been $300 just for the parts and I'd still have to build the wheels.
Velo Orange has rim and wheel options, as do many other shops. The VO wheels look to be relatively heavy rims with straight gage spokes and the wrong spacing, so not a good fit for my needs.
So, if I bought an assembled wheel with 126 mm spacing, Can I simply remove a spacer to fit the hub into a 120 mm frame? There is also re-dishing required, correct?
The hunt is on!
