I guess my gravel bike is my go to bike since I ride it the most.
Really- the bike I go to is the one that will work best for where/how I am riding.
singletrack- my MTB or sometimes my gravel bike if the singletrack is twisty riverbottom and mostly flat.
gravel- my gravel bike.
road solo- one of my road bikes.
road casual group- one of my road bikes or maybe my gravel bike.
ride with my kids on paved trails for distance- road or gravel bike.
ride with my kids most any other time- gravel bike.
Weather really doesnt determine what bike I will ride. It will determine if I ride at all though.

I guess I have two. For modern club rides, but on windy days, I prefer my old 2007 Roubaix. It has good hill gears, is usually fast "enough", and still comfortable. My usual vintage ride is my '73 Super Course, which I built myself, is just as comfortable, nearly as fast as the Roubaix, but has the vintage feel and look that I like.
I have a faster aero frame carbon bike, Di2, disc brakes, high profile carbon wheels, but the stiff ride is efficient, but tiring, and the high profile wheels are a pain on a windy day. The old Roubaix is the best all rounder modern ride for me.
I really love the old Super Course. My first bike build. It is pretty bulletproof, has good climbing gears, and is just a joy to ride. I built it as a "cheater" Eroica bike. It performs well on gravel and pavement, and climbs well, too.
