Road Cycling “It is by riding a bicycle that you learn the contours of a country best, since you have to sweat up the hills and coast down them. Thus you remember them as they actually are, while in a motor car only a high hill impresses you, and you have no such accurate remembrance of country you have driven through as you gain by riding a bicycle.” -- Ernest Hemingway

I've never raced but plan to race next season. I can average 23mphr to intermediate 28mphr, hold there for a minute or two and back to 23 mphr.

Sorry, but that is World Tour pro level and there is no way you can do that, not after 6 months of riding! I don't doubt that you may be a natural talent / genetically gifted individual, but you are certainly overstating the numbers.
Sorry I don't have a garmin yet, I just use heart rate monitor. For 40 miles we do take a break but not 30 miles.

No "we", just you solo. You don't need a Garmin, you could use a smartphone and the Strava app, but you can also just time yourself on an out and back 40mi loop with no stops and work out your average speed from there.

I do intervals the other way around. I hammer 100% of the time on z4 (240-260w) and depending on the day I do either 10x5min z1 with 2min z7s inbetween etc etc. Other days I may do 1x5min z1 and 2 30min z2 at beginning and end. All these for a 2 hour ride.

That's cool you're up for the challenge. But even with a strava or garmin link as proof, you'll still subject yourself to accusations of hiring a pro or riding a moped.

I'm not that fanatic...it's just biking.
