I saw these posted at Art's I think and was like, "whoa, conti gumwalls!" but they were $80/each. Then I saw gumwall GP4000s for $40 and was like, "I need to get me some of those", but I ended up getting pro1's...let's see what road tubeless is all about!

Your cog is slipping.
Not sure what you were looking at. Grand Prix Classic tires have always been around 40-45 bucks each.
The only difference between those and the GP4000 is the tread pattern.

As Mitch Hedberg would say "Every time I go and shave, I assume there's someone else on the planet shaving. So I say, 'I'm gonna go shave, too."

Never ridden them myself, but they're heavy and you can probably get just as good puncture protection at a reasonable price without all the weight.

I got a new (used) bottom bracket, and I'm having a hard time getting it to hand-thread on. It gets started, but stops after a half rotation or so. I'm worried to just grab a tool and start cranking away. Shouldn't I be able to thread most of it by hand? I tried it on two different frames, so I don't think it's the shell of the frame that's messed up. Could the threads be stripped on the bb itself?

Your cog is slipping.
Maybe? That's not really something that can be diagnosed over the internet.
What bottom bracket is it? If the threads don't look damaged, are you certain it's the right threading?

Are specific brands of tires known to run taller than others (in the same size) or does it usually depend on the specific model/sidewall design?
Just seems every Conti 23mm I've used is similar in height to most others 25mm....Just curious if anyone else has noticed anything similar with other brands.
