The longer lengths are for deep section rims. Does your rim look like this?

Probably not. You can get away with the shorter stems. Although a long stem won't hurt anything aside from looking goofy.

Understand, but when I shop on amazon there's no option to choose the length, at least not that I've noticed. Do the tubes come with all 3 lengths then you mount the size you need?

No it comes with a specific length. Look at the Amazon listing. At some point it will tell you the stem length.

I didn't pick up on that, thanks for that link! Getting close to pulling the trigger on a new set can't wait. I will definitely report the results.

You'll also need some of these if you're planning to use presta tubes in a schrader drilled rim. The screw on style of adapters won't work with a lot of TPU tubes because of the smooth stems. I've never used them but they apparently are either plastic, rubber, or alloy. I have no idea which is best but I'd probably buy the alloy ones. Looks like those are installed from inside the rim, under the rim tape/strip. There are some positve customer reviews and photos of people using them with TPU tubes.

I've been running TPU's with a patched rear for going on 5 months now. Zero issues,and they hold air better than regular tubes. I used to air my tires every 2-3 days,now it's once a week. They're a bit futzy to install,but I've yet to pinch one at the shop.

as you plan on running tubes make sure you do not get tubeless ready tires (TLR or TR are common markers)

Installation of these is much tougher than non tubeless ready

If you don't shop at Amazon you won't have issues. Go to your local shop, or if you really cannot get to a local shop or hate going out in public or whatever there are tons of actual brick and mortar shops with online shops or dedicated online bike shops. Avoid giving billionaires more money and promoting a place that is more than willing to sell fakes, knockoffs and previously sold goods. Your local shop has tubes that will work just fine.

From your chart, the Conti Light Butyl looks to be about 11 3/4 watts.
The Revoloo Ultra TPU is about 11 1/2.

Why would I give up higher cost and less durability for 1/4 watt?

I love to buy new stuff and seriously looked at TPU, but the marginal gain seems to be about the same as wearing a smaller watch or taking my house keys off the ring.

Maybe if I were competing in the world champs.

The Revoloop Ultra is 11.0 watts. The Conti Race28 Light is 11.6 watts. A difference of 0.6 watts.

Revoloop...
Lower RR: yes.
Lower weight: yes.
More compact in saddle bag: yes.
Higher cost: yes.
Less durability: debatable.

I love buying new bike stuff, I really do. But this sounds like spending a lot of money for nothing.

TPU offers lower weight and greater durability than lightweight butyl, and virtually eliminates the risk of sudden, total, pressure loss.
