The Recipe Thread
There have been various threads lately about camp kitchens and cooking. I thought it would be nice to share some favorite recipes since a good meal at the end of the day is truly one of the rewards of touring. Lets try and keep it to one pot meals made with stuff you can carry for a least one day safely in a pannier. Here is a favorite of mine.
SHRIMP ALFREDO
Alfredo noodle side dish (Lipton's Noodles and Sauce etc)
small can of cooked shrimp, drained (usually found with canned tuna)
some presliced mozzarella cheese
2 tablespoons powdered milk
some coarse black pepper to taste
Optional a bit of white wine if you have some with you (1/4 of a cup)
If using the wine, use it to replace some of the water called for on the package. combine water, wine and powdered milk in your pot and prepare according to directions on package. Towards the end of the cooking add the shrimp and black pepper. Most packaged noodle dishes call for letting the dish sit for a couple minutes before serving, at this point cover the top with the cheese, cover and let sit until it melts, you can use other cheeses but the mozzarella melts easily. Dig in and enjoy.

Great idea for a thread.
Here is one of my favourites:
Beef Stew
Ingredients (I have listed some specific ingredients but it is very flexible on the vegetables)
* 1 1/2 lb stew beef (or cut-up steak)
* 1 bag baby carrots
* 4 medium potatoes
* 1 white onion
* water
* 4 celery stalks
* 3 beef boullion cubes
* 2 packs brown gravy mix
* salt & pepper
How to prepare
* Lightly brown meat in a pan, or in the bottom of you stew pot, until it's about medium rare
* Chop up potatoes, carrots, onion, and celery and throw it all in the pot
* Fill with water until it's about a half inch over the ingredients
* Add both packs of brown gravy mix and your boullion cubes
* Mix it all up real good, bring it to a boil, and let simmer for about 30 minutes
* Salt and pepper to taste
