They are getting more popular but still limited distro, I know some places that carry Beyond products but not that specific burger.

Baked Potatoes are good, heck any potatoes are usually pretty good.

Had pasta tonight. Cooking Navy Beans and rice tonight to eat tomorrow, have to travel on Sundays.

I'll be near a large Whole Foods and a Trader Joes tomorrow. I hope to check them for vegan food.

Vegetable and gnocchi stew with a tomato and roasted red pepper base. Carrots, celery, diced and grilled onions and peppers, white beans, garlic, basil, oregano, and some crushed red for heat.

The naturally occurring starch that bled out from the gnocchi thickened the liquid to a delightfully dense and velvety smooth texture.

Just a wisp of Parmesan on top.

Multigrain rolls on the side.


*** All veggies chopped into large chunks cuz I don't dig dainty food.

Today its more baked potatoes. I eat them a lot because they cook without me doing anything.

I apparently missed out on my usual Gardein Holiday Roast this year, the stores are all sold out. For Thanksgiving we're going to have mashed potatoes and vegetables. It will be a home work day anyway so we won't have time for anything else.

Damn that sucks. I would invite you over to my big feast but alas I have little space and too many people to fill it. I kept getting calls and emails this week of friends asking to invite other friends that I forgot or didn't have contact info for.

I always liked the sides anyway hence why I am making 4 sides. Stuffing, Mashed Potatoes, Green Bean Casserole (with homemade mushroom soup) and mac and cheese, all vegan of course and all delicious.

Tonight though I had vegetable korma and Aloo Ghobi that I didn't make because I was too busy cooking and prepping other stuff.

I had some homemade Corn Chowdah! It was cheap and tasty. Plus I had all the ingredients which is a plus since I need to go food shopping.

Been playing with a food dehydrator.

It is a little bit tedious but the product is really good once you get the hang of it.

Zucchini has a surprisingly intense flavor. Oranges are probably my favorite. I dried some a cut up lemon - super intense to the point of being almost inedible. Raisins are unlike any I've had.

Going to do some hot peppers and experiment with jerky.

I think I need to get a dehydrator. My kids love that kind of stuff, but it's expensive in the store (and usually has added sugar). We got my 7 year-old a juicer for Christmas and she thinks it's the coolest.

I had an Excalibur dehydrator but ended up giving that to some friends who got married because sadly I didn't use it but once. I really wanted to us it more but just never really had the time.

The Excalibur's are super nice. That's a really nice gift.

It does take time and now I know why doing it in big batches makes sense. I work from home and so have the time during the week.

The problem is snacking on the stuff before it is fully dried. By the time everything is done I've eaten half the product.
