Here's mine. Waiting on some fenders and still contemplating what kind of rack/basket to put on it and where.

Just got my townie back from my sister and finished doing some rearanging of parts between bikes.
Still need a better rear rack, thinking of going for a wald with folding baskets, this is just one that was lying around. I flipped the bullhorns I have been using on my road bike and threw them of here, I found them far too flexy for my liking but they work quite nicely in this application.
Also need to replace the saddle, also still waiting on a good deal for a 3speed coaster brake and some panaracer pasela whites

Heres my bike as of now, i guess its kind of a townie.. It has had every kind of bars you could imagine but this s how it looks right now. Its awesome.

Yeah its a chopped down old wald rattle canned black. It was solid for a while, but the front support wasnt attatched to the basket so it rattled, it couldve probably been jb welded but it didnt bother me enough. That fork had so much trail i could put a 30 pack on there and still ride no hands.

I don't have one, but these things are pretty cool. I saw one at the LBS with a Brooks saddle, 3 speed bars, and some cork bar tape that looked super classy.

Here is what I am guessing would be my late 1970's to early 80's Vagabond TX100 single speed coaster brake "townie". I just pulled this out of a dumpster the other day almost like you see her. I added a new seat, used but "newer" tires, a newer front wheel, a saddle, a matching left handgrip and the front hand brake.
It needs a new back wheel as the rim is dented and a little wobbly. I still need to clean some of the rust off of the chrome fenders and I just installed a rear rack.
All the parts I had to add were lying around waiting for this type of bike to come along. It's super fun to ride but pretty heavy. I use it daily now.

what exactly constitutes a "townie" exactly?
from what i gather, its a singlespeed older or older looking bike with a rack? pardon my ignorance lol

yep, that's a townie.
As far as I'm concerned, a townie is hard to define, but it's pretty easy to tell when a bike is NOT a townie.

3rd bike For bar hopping and guest. Largest Mixte I ever rode or seen. Seat tube (center to center): 54.6cm, Top tube (Horz.) 56.5cm.
I'm 5'11" and the seat height in the picture is set for me. Now I can understand why the girl who I bought from said it was too big for her. I normally ride a 55-56cm track frame. The bike came stock with drop bars.
These bikes are fast & comfortable when built in a minimal way and matched with a light wheelset; this is key. Don't notice a huge amount of much flex when riding hard except in the stem/bar area.
My 2nd one, Built for the girlfriend:
