Need good quality 27-inch wheelset

Can anyone suggest a good quality 27-inch wheelset for a singlespeed?

My singlespeed project posted several weeks ago here has come along nicely. I would now like to upgrade the wheels and want to keep to 27-inches rather than 700c.

Alternatively, I plan to have the 6-speed cassette removed and place a single freewheel with spacers. What tools are needed? I must be missing something obvious with this task as my search for directions has not been very fruitful. Is redishing the wheel a necessity due to the cassette replacement?

If you are buying new wheels just get 700s unless there is no possible way to make the brake work. More and better options for both tires and the wheelset plus they will fit other bikes when you replace the frame.

To redo the rear you will need:
Freewheel tool.
cone wrench(2 is easier)
wrenches for locknut.
new bearings,might as well spend the dollar rather then put old ones back in.
spoke wrench
truing stand or just use the rear brake.
degreaser, clean that **** up while you have it apart.

redishing will most likely be necessary. If the wheel is in poor condition it will be a ***** to do too.

I had a similar predicament and built my own with 36 hole Sun CR18 rims, Surly hubs, and double butted spokes. It turned out really nice and bombproof.
