would things go horribly pear shaped if i tried lacing an 18 hole hub to a 36 hole rim?

Could be done, but keep an eye on it, as it probably won't stay true very long. I've seen people ride BMX on 48h wheels with 24 spokes, so it's definately possible, but I'm not sure I'd recommend it.

If it's a standard box rim, I wouldn't do it...

Well, with all those holes in the rim not being used properly, I would say the strength of the rim is impaired.

Graeme Obree used to do TT with less spokes in a normal rim.

Wouldn't think long term strength any good, but it would work for a while.
