First "build"...advice/shop recommendations in Bay Area please!
 
I guess this is an introduction. It seems I've fallen in love with the SS aesthetic and am no longer able to resist getting more into cycling. I've been riding around for a while on a 27-speed Bianchi, trying to avoid getting into bikes the way I'm into cars (which I seem to have a habit of restoring and modifying to the nth degree) but I can't take it any more. I'm pretty handy and would like to do my first "build", though I've never laid a wrench on a bike before. I'm envisioning flip flop hub and front brake to ease the transition to SS, plus flop and chop bars just because I think they look so freaking cool.

I got a free 1970's Schwinn Super Sport frameset (horizontal dropouts, one piece crank, fillet brazed which I think looks so much slicker than lugs), which I'm planning to clean up with the grinder to remove extraneous stuff like fender eyelets, kick stand, all the routing stuff for the rear brake and derailleurs etc. Then on to blasting and and powder coating. I know next to nothing about components at this point however (I have camped out on Sheldon Brown's site for a while though). Any recommendations on a shop that will be patient, honest, and knowledgeable enough to get me started (ideally East Bay, SF, or Peninsula) with fitting this thing out?

don't grind off all the other crap.

it ruins the frame for no good reason.
