You can't use any part of the old freewheel to make a fixed wheel. You can get a fixed cog and screw it onto your hub, I'll leave all the roto-fix/suicide comments to others. I suggest you put those brakes you stripped off back on.
I would have thought an old 10 speed would have 42 and 52 tooth chain rings Choose your chain ring and remove the others, you may need to get new shorter chain ring bolts. If you're going to change up rings, make note of the bolt circle diameter before you go out getting new ones.
