I don't know what "decent saddle to bar drop" is. Saddle to bar drop is neither desirable nor undesirable, it simply is. What is desirable is a properly fitting bike that you are comfortable riding. Some people are comfortable with more drop than others.
I do this:

And i dont necessarily know if having a big saddle - bar drop is good or bad, but i prefer my bars low and im quite comfortable on the hoods now, Though my drops do feel a bit too deepand feeling a bit stretched out in the drops, I may shorten my stem, but the frame is already too small for me by a size few cm or so.
You need end caps or else your brake won't work at all. All you're doing right now is slowly pushing the metal coil out of the plastic casing inside of the housing, so you might need new housing as well.
Also, do you know what spindle length you are using with that Shimano 600?

2010 Raleigh Rush Hour I changed a few things around. Since the pic, I've drilled the seat tube to mount the bottle cage. That was my first SS,,,, I'm hooked!
