54cm top tube but I think that I'll probably shoot for a 52-ish top tube on my next frame now that I know that I have long legs and a tiny upper body. Plus it looks more pro.

Every individual is different and if you were to be professionally fitted you would find that there is a range of sizes one might ride and a lot of that has to do with the specific geometries of different bikes.
At 5 foot nine my perfect size can be 50-55 cm, depending on bike setup... my road bike is a 50 and my fixed road bike is also a 50 but the much higher stand over of the fg makes it more like a 54 in that respect.
Most crucial is the tt length as this can make or break a bike...

My son is 5'7" and we've built up two fixie conversions.
1st) The Bianchi has a 51cm seat tube, so we compensated with a long 120mm stem and some nice Profile Design wing-style bullhorns to stretch him out on the bike. It feels great, even to me at 5"10".
2nd) A Peugeot with a 56cm seat tube, which is my nominal size. We put risers on this one for a more upright position. Again, it feels great to both of us.
So, you can make a bike fit, and it's not necessarily a compromise, if you do it right.

I am 5'7" with a 31.2 cycling inseam.

you guys all ride tiny bikes.
I am 5'8"-5'9" with an apx 32" inseam and I have been riding around on a 57cm x 57cm conversion for 7 months. Admittedly it's a little large so I have a 55cm leader 725tr frame on pre-order with all new components for a fun new build.

That is too large. My road bike's top tube is 55cm and I had to shorten the stem to a 90mm to get the fit right. 80cm inseam (31.5")

Huh, OK. Tell that to me nuts! My last horizontal TT Road bike was SCOTT Speedster in size 54cm. Again, Just enough to clear the boys.

I'm about the same size. I like a 56CM TT. I'm really not much into small frames with a foot of seat tube sticking out. Most young guys go for smaller frames than they should. They believe their saving a few grams doing it. To each his own I guess.

I'm 5'8" and I feel like I have slightly shorter legs, or else I like more stand over height, 28 inseam realistically, and I prefer 50-52cm frames depending on the bars and frame geometry.

51cm Leader. This bike has a 55cm top tube though. I have a 30" inseam. I'm also 5 foot 7, but i use a 130mm stem to make up for my short legs/long torso.

I'm 5'8" but I have long legs (33.5" cycling inseam) and my bikes are 56 and 58. The 56 actually has the seat post about 2mm above min insertion (OK, it's only a 200mm post). Top tubes are 56 on both.

Some manufacturers build bikes with longer TT lengths relative to the ST measurement... in the mountain biking world Gary Fisher's and Rocky Mountain bikes are well known for this.

I'm 5'8" with like just shy of a 30" cycling inseam. I ride a 53 IRO mark v, it seems to fit pretty well.

5'8", with 29.5" cycling inseam. i ride a 52 bareknuckle, and a 52.5 TT/52.5 ST IF crown jewel.
the bareknuckle is 52ST 54TT 56DT if i remember correctly. a little long for me.
