Recipe for success.

THE most delicious chocolate cake you will eat. Made it last night - a family favourite.

MISSISSIPPI MUD CAKE -FROM THE Australian Women's weekly recipe book

250 g cold unsalted butter chopped
150 gram dark chocolate, chopped
2 cups - 440 gram, caster sugar (not always available in USA or Canada)
you can grind ordinary sugar in a processer
1 cup 250 ml hot water
1/3 cup 80ml whisky
1 tablespoon instant coffee powder
1-1/2 cups 225 gram plain flour
1/4 cup 35 gram self raising flour
1/4 cup 25 gram cocoa powder
2 eggs lightly beaten

method:
grease 23cm square slab pan, line base with baking paper
Combine butter, chocolate, sugar, water whisky and coffee powder in medium pan; stir over low heat until chocolate is melted.
Transfer mixture to large bowl; cool. (AND I MEAN COOL! or the flour will cook as you add it = lumps)

Stir in sifted flours and cocoa, then eggs; pour mixture into prepared pan.

Bake in moderately slow oven for 1-1/4 hours - say 325f.
Stand cake 30 minutes; turn onto wire rack to cool.
Serve dusted with sifted icing sugar.

Voila!

Serve with fresh cream and seasons fruit.

I made one last right out of the krogers brand box. Add 3 eggs some oil bake frost eat. hmmmmmm good. It freed me up some time to go for a ride on a nice sugar high.

250g to ounces
850ml to cups

Forgot about the imperical v metric issues.

ps Dont skimp on the chocolate used in the mix - makes a BIG difference. Any whisky will do

Add lots of love too...
