If you're looking for an upcoming event, the Roan Moan is one that shouldn't be missed. It hails from Bakersville, NC but goes into TN and includes climbing Roan Mountain. And you don't have to wait long to ride it, because the event happens this coming Saturday (30th). Highly recommended.
The Cherohala Challenge is a noteworthy event, though you will have to wait until next year since its already occurred. An epic route that traverses flat farmland, finger lakes and rivers, wooods, the infamous "tail of the dragon" stretch that includes about 310 curves, and of course the memorable climb up the Cherohala Skyway that just never seems to end.
The 3-State, 3-Mountain event is another popular event but, I have not ridden it. Its on my list tho.
The Blue Ridge Breakaway on your list should not be missed either. A really grand route that includes the most scenic portion of the entire Parkway (imho). And it will make your legs sweat.

You might want to watch the Chattanooga Bike Clubs website. There is an interactive calendar of rides around the southeast.

the R.A.C.K. ride across KY is coming up this month i think. starts at bike world paducah and goes to fulton then back for 108 mile total. you can get a ride back from the half way point where they stop to eat at a mexican restaurant. im considering half of it but haven't decided for sure.
