I wanted to start small with some local routes within the San Diego region. Perhaps some suggestions for La Jolla, Del Sur, Poway, Encinitas?

I actually have a book *gasp* from the early 90s with "iconic" san diego rides. Since I haven't lived in SD since the early 90s, I couldn't tell you where my copy is but the library *gasp* might have one.
Another idea is to check out strava heat maps - if it's really bright blue, that means people are riding on it a lot and probably for good reasons.

Well the east side of the bay isn't all that nice, it's shipyard/industrial, but most of the ride is nice. You ride around to Coronado and take the ferry back.

If you want something short and easy, you can do Coronado Ferry Landing Path and Lake Murray. Another nice one is going from Imperial Beach to the Ferry Landing via Silver Strand and the path.
