Are you going to have a rental car? If so, they may be some places down near the beach for you to rent a bike (cruiser style). I think there are still some beach shacks down at Huntington that rent bikes.
Basically there is no where around D-land to ride. Very congested traffic-wise (I would avoid riding around there like the plague!) and you can't while on the property. Instead bring the walking shoes and hike around.
However you are going at a good time of the year. Enjoy your visit!

I was there in December and i managed to borrow a bike from a Friend, You can ride the SART (Santa Ana River Trail) its approx 2 miles from Disneyland, Its a awesome flat trail and it goes for miles, Take the back streets to the trail,

I wouldn't quite write off riding in the Disneyland area - because the Santa Ana River Trail is not too far away - Orangewood and 57 freeway is close access. (Edit: Never mind, I should have read the previous post before replying.)

While you're here, rent a car and take the bike (if you can find one to rent) to Malibu. We've got some climbs and gorgeous views for you, dear New York friend.

I have to agree Laguna Cyclery is about the only place I know that will rent out a nice road bike. Patrick and crew are very nice and if you go south to their shop the cycling around there is gorgeous especially this time of year (take PCH down to San Clemente and possibly to Las Pulgas).
I really don't know of any other shops that rent/loan out road bikes. You might check with some of the local clubs ot see if anyone has something you can use out on one of their rides. Check bikeirvine.org or ocrr.com or ocw.org.
But check with Patrick. If he doesn;t have something he ight be able to recommend someone else.

Funny how mistaken those who don't really know what they are talking about can be. There is some great riding from the Disneyland area. If one limits themselves to main arterial streets, yes it sucks. Google Maps is not just a novelty.
