OT Recipe advice for Roquefort Papillon cheese
 
Hey.
This is a bit off topic, but I bought this delicious cheese in Costco (I have a weakness for good cheese). Costco being umm Costco even good stuff comes in big sizes. So at this rate if I just use it on sandwiches it will take me at least a month to eat it. So can anyone recommend good recipes with this cheese. Maybe in a sauce or something?

try it with endive salad.

rocquefort cheese
crushed walnuts
diced tomatoes
and slices of endives.

the dressing will be a classic French vinaigrette style. If i can recall, this is how you make it.
olive oil
add grey poupon type mustard and whisk
slowly add balsamic vinegar and whisk
finally add sugar to taste and whisk.


put dressing on the endive salad and be forever addicted.

Eat it like the people in Southern France do, a little bit on the tip of a baguette drizzled with olive oil at the end of a meal, just before coffee.

Also, TIP's salad above is great, though I'd swap a pear or an apple for the tomatoes for flavor and honey for the sugar because it dissolves better.

also good with honey on some bread, or to really bring out the flavor (like you need to with blue) some unsalted butter (and of course some wine)
my wife makes a mean blue cheese onion tart. if you want the recipe let me know.
i love a good blue cheese. last time i was in france i had some roquefort that i swear i tasted all the way to my scalp. it was insane.

WOW! Such Gourmands in SoCal! Im impressed! I like the Salad above with the apple or pear like Haimtoeg said. The Baguette suggestion is great also. And Burgers and sandwiches like you already said...

Im pretty sure that if properly packed you could keep it around for at least 2x as long....

Oh yes honey and olive oil! When I was in Venice my cousin ordered this sample cheese platter, which came with a bit of honey and olive oil. That was some very delicious cheese. :) Plus their pizza was awesome too. It had 7 different cheeses!

Sure I am always looking for new recipes. :)

-melt some on a steak, cheese stuffed hambugers...

The problem with blue cheese is its not really a melting cheese, the flavor is pretty intense.... so other than putting it on top of somehing or eating it relatvely plain, there's not much there. Go to www.epicurious.com and search for recipes there. Or ust google the cheese and recipe and there'll be a ton of stuff.
