Katy and Mark Twain

Once my rotator cuff heals I'll be considering a trip along Katy, but will consider adding a week or so in the Mark Twain National Forest, pretty much in the heart of the Ozarks, to be done on gravel forest roads. Has anyone done this? I'll start looking for maps. Does adventure bikes do anything regional like this or only long distance stuff.
GORC, "gateway off road cyclists" is in St. Louis they should be helpful. And there is always google.
