I also cruise the hiker forum, Whiteblaze.net. Some of the guys can tell you the wt difference between ankle socks and crew socks. And yes I did buy a postage scale that goes to grams.
But the question is what do you bring 2 of ??
I'm thinking
2 tire levers
2 tubes
2 water bottles, maybe 2+
2+ socks
2+ underwear
2 T shirts, // 1 wool T shirt, 1jersey
2 bicycle shorts
2 pr shoes, // 1pr bicycle, 1 pr street
2 pr gloves // 1 pr short, 1 pr full finger // depends

That about all I can think of 2 of !!
I'll ask the hikers their opinion.

I went with 3 pair of cycle shorts to alway have a clean dry pair daily.. + surgeons scrub concentrate
to keep the skin bacteria level minimal , to not have carbunkle/saddle sores..

3 tire levers used simultaneously gets stubborn tires off ..

and a 3rd tire as a backup.

Two leg warmers (one for each leg). Same for arm warmers. But really for clothes it depends on likely weather conditions. If I am going somewhere local in July, I am not likely to bring cold-weather gloves and other gear.

Two pair of non-riding glasses. One cheap pair goes in the jersey pocket for on-road stops. The nicer pair stays in the bag for reading in camp.

For a week or so tour, two disposable razors for legs and face.

Two pots to cook with.

Two forms of plastic payment method--credit card and ATM card.

Agree with about half of your "2" items above but... no underwear, one pair of bike shorts, one on/off bike shirt, one pair shoes, one pair long gloves for cold weather but otherwise none.

Ditto this exactly.

Add spare spokes, but only one of each size (may be three on your bike).
