Hi!
So I recently switched from 2.00 Marathon Plus Tours to some 2.35 Schwalbe Big Apples for my 26" Surly LHT.
Loving the Big Apples so far, just have one problem; I can't fit my old mudguards on anymore. Do mudguards even come in sizes that accomodate 2.35 tyres? Anyone with a similar setup have any recommendations? My old mudguards are 26" SKS Chromoplastic.

SKS in 26in come in different widths, I have the 55mm ones I think, I believe the next size is 65mm, but the issue here is the frame.
do some searches for max fender size the lht can take, I don't own one, but I suspect you are at the limit.
I have a friend who has the wider fenders on his bike, planned for 2.1in tires, and has fit in 2.5 in tires with those fenders, but again, it's not a LHT.

The other thing with sks fenders is that the stays are cut to size, because of the enclosed attachment system, so even if you could raise your existing fenders, you may run out of stay length.

I know this makes no since, at the moment. I use 29er clip on fenders on my 26er, and 26er clip on fenders on my 29er.
The 29er sees much rougher roads and bumps, so needs more clearance. The 26er sees some rainy roads in Washington, so I need more coverage.
I am good a breaking full coverage fenders, and, or I like the biggest tires I can fit on my bikes.

Not a LHT, but I have 65mm fenders on one of my bikes with 57mm tires. Bought the fenders almost a decade ago on a clearance sale, Bontrager 26 inch.
I suspect your 2.35 tires would be too wide for the fenders that I use.
If you are running V brakes and if you put really big fenders over the 2.35 tires, you might have trouble fitting V brakes. I am using Tektro 857AL V brakes with 110 arm length to get the clearance I need.

Try some plastic zip tied to the downtube and underneath the rear rack( if you have one) I like coroplast or vinyl siding.

being flexible, they are super tough, can be bent here and there, and it just comes back, and very light also.
on the front, I use one of those removable short mtb fenders, made for front suspension.
anyway, good point lee, there are other options out there, not as good as a real fender, but not bad.

cut it to be on either side of the lowest point .. on my bike, it was the fork crown,
so a through bolt holds the 2 separate parts...

The widest SKS fenders cover my 2.5 Extraterrestrials so yeah they are wide, But that is on a Troll, so there's heaps of room between the stays.
