I would do Land's End to John O'Groats (Great Britain) Along the way I would stop at every pub I could find and buy everyone a couple of rounds.

It cost me about $2000 in airfare to get there and back. It's much less if you are only going for 30 days or fewer, but as soon as you fly just about anywhere in the world for longer than 30 days, the price nearly doubles. I have no idea why.
The rest of the trip cost me about $3000.
Total: $5000.00
So ... that $7000 might not last the entire 8 months to a year unless you were really careful with your money.

For $7000 and time to spare ........ hmmmmm .... so many places to choose from ....
I'd probably try to see how far I could get cycling (as much as possible) from Alaska to Argentina ... or something like that.

Well, that's the exact amount of money I'm trying to save for the trip from Vietnam to Spain. Am always been fascinated by Central Asia and Middle East.

Vancouver to Chili would be a good trip but I think I would start in Mexico.

My next riding goal is to tour Hungary. But, flitting about to bed and breakfast's, I'd suspect it will cost under $1000. I have heard, the former Soviet military roads have been converted to bike paths in Hungary and the Czech Rep. and the riding is awesome.

I could probably get $7K together without too much trouble. It's the time thing that proves difficult. I would probably start at home and head NW until I got through Alaska. Is that even possible?

That's how much I have budgeted for my upcoming trip around the Himalayas (See link in my sig)...
With your kind of money, I'd probably do something like a tour from Beijing in China through Vietnam and Laos to Thailand, even further down to Malaysia... Another favorit one would be from Europe to India (or China) overland... Or, as Machka suggested above, from Alaska to Patagonia
Sorry, I just love the BIG & LONG tours

I'd want to do the perimeter of the USA. I also like the idea of Alaska to Argentina.

I would connect the Adventure Cycling routes and would circle the US, then if I pinched pennies well enough I would go to Europe and tour some more... One can dream...
