tour cycling help!

tour cycling help!
hey there people,
we are planning on doing an european cycle trip next summer, the plan is to go up to scandinavia, through western and eastern europe and possibly down to greece, spain etc(with a bit of train travel in between).... We are planning on travelling for a good 5 months...mostly wild or paid camping...... hey we never done a cycle tou before but we thought it would be a grand way to see europe.... and see how it goes...and hey why not!.... but first thing is of course we need bikes.... so what is it i should look for, as i will probably be buying secondhand.....
-how many gears are recommended?
-are hybrid bikes suitable for a touring trip? (as these seem more in our price range 150 - 200 pounds, i guess)
-possibly some things to look for when looking at a secondhand bike?
-any other handy information, such as maps, accessories, cycling posture, streching, or anything else that you feel might be of interest for new tour cyclists.
