Touring and volunteering in Central America

Touring and volunteering in Central America
hello all you worldly cyclists
i am planning an extended trip to Central America that would combine biking (from San Diego, CA to Panama) and stopping at least one week in every country to volunteer (on farms, in schools, bike shops, NGOs...whatever it might be as long as you can get a better feel of the people from that country).
the time frame is roughly from june to december of this year, maybe continuing on into South America if all goes well. this would be a self-sustained journey, sleeping at warm-shower-ers or locals at best, or just on beaches, hammocks, in tents, schools, churches or whatever option we find that day.
now, as much as i like traveling alone, it think in this case i might prefer to have someone along for the ride (for reasons of safety and own sanity). so if anyone thinks this is something they or any friends might want to do, email me and let's share thoughts. i'm also considering doing this to raise money for a local non-profit but that's still up in the air.
if someone has personally done this trip, or parts of it, i would love to hear from you as well (ex. what parts not to miss, what parts to avoid, what to bring that one wouldn't think of etc)
needless to say, any and all advice is welcome.
