Anyone tour on a Trek Fitness 7._ series bike?

I was just curious if anyone has ever done any light touring (meaning rear panniers only) on one these type of bikes. I'm wondering if the rear triangle, seat stays and chain stays, are stiff enough laterally so that a load wouldn't be swaying too much. Oh and yea, I would probably get a stronger wheel for the rear. If you have, what rear rack did you use because it appears that there is quite the distance that the mounting straps would have to cover to get to those threaded mounts on the seat stays? Thanks for your thoughts
