Can I bike up the gulf of mexico on a Fuji Finest w/ panniers?

Can I bike up the gulf of mexico on a Fuji Finest w/ panniers?
I'm thinking about taking a longish ride (maybe a month or so) up from central florida to new orleans area and then up the missisipi. The best bike I can find around here on short notice is a Fuji Finest (I'm not sure what model). It seems like a decent bike, but I'm not sure if it'll be good for a couple months out on the road. Its the holes for a rear rack. I'm just worried that it'll be too difficult to maneuver with a tent and panniers on it. Any advice?
