Professional Fuss-Budget
Either one is fine. Volpe if you prefer STI, CC if you want barcons. If you get the CC, just make sure to lower the gearing -- different cassette and/or lower front. The crank can be set up as a double, compact double or triple.

Pretty much the same typle of bike-- the Volpe has a triple crank, although you might it. The Crosscheck has barend shifters.
Go test ride them, check out the shops that sell them, have fun!
Remember that both bikes are quality rides, either one of them will work for you. There is no wrong choice.

I've done some light tours with my CrossCheck set up as a 1x9, 34 t chain ring and 11-34 cassette; tires are 42 mm Marathons during summer (and W106 during the winter). Have used a Nelson saddle bag to carry stuff, also a pair of smaller Lone Peak panniers with a "Mega Rack"; either system worked well [didn't use them at the same time]. The CrossCheck was very comfortable, plus it is great on our local dirt roads and in urban areas with rough pavement. I have no experience with the volpe.

I rode a CC for a few years. Since I have short arms and torso for my height, I needed my drop bars quite high, and had a silly number of headset spacers below the stem. At the time I would have preferred the Volpe for it's longer head tube. So I'd say if you like...:
your bars high - Volpe
your bars low - CC
