One Size Fits All - Pavement/Offroad set up question

Hi All,

I'm a rookie here looking for some info...

I have an older Bianchi Volpe (w/700) that I'd like to set up as a good tourer for both paved rides and offroad (bikepacking) treks. I've taken it on some relatively short week-long tours here in NorCal and like the way it rides. This summer I'd like to do some longer offroad treks, nothing gnarly, most likely just graded and slightly rougher dirt Forest Service roads.

Ideally I think I want to find a set of rims/wheels that I can use both with slicks for the longer paved tours, and with wider, knobbier tires for any offroad sections. Is this realistic? Is there a good rim that is recommended for this that will accept a range of tire widths?

Any suggestions are appreciated.

28 -> 47 mm

Sheldon Brown (do a google search) says you can often go one step thinner (to 25).

Mine appear to work fine with 25mm tires.

Keep in mind that the bike needs the clearance for the wider tires (and fenders, if you use them).
