The 3 parts of you that touch the bike,saddle/handlebars/pedals are a personal choice.There are no correct ones.You just sort of try things until you find what you like.

I wish I had my old Avocet leather saddle but I wore it out,so I settled on a B-17....close as I could get these days.Took 3 tries to get one I liked.

Those old Avocets were good saddles! My ass drifted towards Brooks as I got older but all my cross country tours in my younger years were on Avocet saddles. I sold one I had stashed away on Ebay last year and it sold for $60!
