There's loads of good riding where you'll be spending the next couple of months. I predict good times in spite of your having to miss out on this tour (for now).

Eat lots of ginger, stay well hydrated and rest up.
I brew a tea with ginger, blackstrap molasses, vanilla bean, cinnamon stick (or cassia), citrus peel and a touch of nutmeg and it usually helps out.
As far as cycling, I would wait till you are all better. Trying to tour while sick doesn't sound like fun at all. Maybe if you feel up to it try a short one day trip that is close by so you can get back easily or can call for backup. when you get back take a rest day and see how you feel and if things work out go ahead with your tour.
