Wow... what a dream question!
Take a look at Soma Rush, DeBerdardi Thron (which is what I have), or the Surly Steamroller in the mid-range. Or the Street Dog by Gunnar. These are all steel. You might also check out the super-snazzy Vanilla. They are cool but up there in price. Very pretty. Cinelli would also be nice.
Caveat: I am not a pro or even super experienced. Pick one that you can afford and that would be good for you and don't forget some style!

vanillas are sweet, but there's like, an 8 month wait on them.
personally, i like harry havnoonian and richard moon.
as the folks over there in the road bike forum say: "fit is the most important factor." so either test ride test ride test ride! or find a builder who will do a complete fitting and build a cutsom frame.

if money were no option, I'd look at Waterford, Bob Jackson, or Nagasawa along with some of the other builders mentioned

I saw a website on ebay for a new york bike shop-- nycbikes.com-- since you are in new york and they sell their own fixed they might point you in the right direction.
Dunno.

ok, new version on top. for 1., its ugly as hell. 2., the geometry is too laid back. 3., the fork sucks.
the original, 1. it came in very nice colors (blue, green, polished). 2., it had tight "track" geometry, i meen it is supposed to be a track bike. 3. sloping top tube, and no integrated headset.
personally i think the original blows the new one away.

kurremkarm--the name of the shop is "spokes and strings"... they are a no-B.S., get you rolling type of place. If anything they are biased against purists. The frames you're talking about are pretty nice, light aluminum. They don't stock high-end track-specific parts though, so unless you want to build it up as cheaply as possible, you'll have to look elsewhere.
