Pesto Tortellini! Yummo!
Photo from here:https://threebridges.com/catalog/tri...h-basil-pesto/ although that's not where I get my Pesto Tortellini. However this looks very much like what I get.

My mom's fideo (sopa seca). It's basically angel hair pasta that's browned a tiny bit in a skillet with some oil, then simmered in tomato sauce, onions, and garlic. Pure Mexican comfort food.

Pasta with sauce made with cuddle fish ink. I am not talking about the pasta being made with ink, but rather the sauce itself being made with ink. Yummy. I also have a great risotto recipe with squid and cuddle fish ink.
When I tour I eat a lot of pasta. Sometimes I have to get creative. Scrounged up some asparagus, shallots and roasted vegetables to go with farm made pork sausage in Dorsett, VT back in June. Always tour with olive oil and fresh garlic.

Spaghetti aglio e olio. Just pasta, olive oil, garlic, pepper flakes, parmesan, and parsley. I often use basil instead of parsley (because I always have a basil plant) and add tomatoes (fresh, raw).
Very easy to make.
The only secret is to use good pasta and good olive oil and good parmesan (that you grate yourself).

When we were in Italy a few years ago we had pici al coniglio. Pici is a long, cylindrical noodle like spaghetti but thicker and toothier. Coniglio is rabbit. Both are typical Tuscan, but I've never seen this dish in the States. Amazing.

I grew up in an immigrant Italian family. I love all the pasta dishes. But, when I want to know how good an Italian restaurant really is....it's the lasagna.

Mac and Cheese.
The best mac and cheese I've ever had was in Scotland ... it was incredible!
So, once in a while I try to do something similar at home.
We're not talking Kraft dinner, although that can be nice topped with soy sauce.
We're talking a deep bowl of macaroni noodles with creamy and delicious cheese topped with a brown and delicious grilled cheese.

Stuffed pasta shells, with a really good ricotta, herb and spice mix, and a great sauce. (Still looking for a fabulous homemade sauce recipe.)
Lasagna, when done right.

Favorite I have ever eaten was homemade mac and cheese with lobster and bacon in it. Favorite I make is my baked pasta that is basically a lazy persons lasagna.

None, pasta gives me gas something fierce, plus it makes me fat. Wheat allergies, not sure. But don't get me wrong, I love the flavor of garlic, basil, and a top notch marinara sauce, with some good French bread to soak up the sauce, but my body just can't process the stuff as intended, and I end up feeling sick and bloated after I eat the stuff, and then ravenously hungry after after the sick feeling passes.

Home made pesto from fresh picked Basil with roasted walnuts or pecans replacing the traditional pine nuts, slathered over linguini and Brie.

Starches like pasta give glucose, the pivotal fuel for your mind and muscles, pasta is a great wellspring of complex sugars, which give a moderate arrival of vitality, not at all like basic sugars that offer a brisk, yet temporary increase in vitality, pasta supports vitality...

If you like shrimp, I'll give you a great recipe for shrimp pasta. It's one I concocted a few months back and it has been a smash hit with everyone who has tried it.
