Slowly Gaining Weight?

Slowly Gaining Weight?
This is really strange. Earlier this year, my weioght was all the way down to about 168# at one point. Ever since I got off vacation, I have slowly been putting on a few pounds. Now, I am up to 180#. I still fit into all my pants and such, and spare tire doesn't appear to be getting any bigger. Other than a little on the belly, I don't have alot of body fat, at least it doesn't seem that way.
One thing has changed though. I commute to work three days a week minimum, 45 miles per day, 3 days a week, so my weekly mileage is at least 135mi. To help my legs in recovery, I have started using Pro Rated Whey protein after my rides to recover. It is a low carb, no sugar, protein shake (w/splenda) that I make with milk. Only 200cal per shake, with 30g of protein.
I normally consume 2500cal on off days and 3000cal/day when riding in my diet. Yet this week alone, I have gained ...
2 pounds.
What the...? I am truly hoping that this is muscle building going on, and not fat gain. I keep an eye on my carb intake and such, but just thought maybe some of the health Gurus on here could offer some suggestions for me to keep an eye, in order to maintain, or possibly even loose a few pounds. I am not into major weight loss, but I would like to keep my weight around 175# if possible.
Any suggestions?

How do you track your calories, and how do you measure your portions of normal food? I have to use fitday to track every morsel that I eat, and most of what I eat is weighed on a decent kitchen scale, otherwise I will gain about a pound a week (I need to lose 4 bf % points).
The recent addition of protien may be the culprit-more water retention perhaps?
