Cheese fat differences?
Can anyone point me to a source of information about the fat content of cheese from different source animals? I'm looking to cut down on my saturated fat intake but love real cheese. So I'm curious about the differences between cow, goat, and sheep's milk cheese. I love them all, but could be persuaded to love one a bit more if it were healthier.

Id also guess that hard cheese has less fat than soft cheese. Try some shredded parmesan
as a substitute.

It seems that goat has lower fat and overall Calories than cow but there are also cow cheeses that are better than others.

No. We're talkin wedges of real cheese covered in mold and handed to you by a fella with mud on his boots, not Kraft or Sargento from the refrigerated section. Hard cheeses usually have a lower moisture count.

i think generally harder cheeses are lower fat soft cheeses are higher fat, i know i like feta and i think its low fat (although i'd eat it anyway)
