Converting a tandem into a utility bike?

Converting a tandem into a utility bike?
Has anyone here ever taken a tandem and converted it into some sort of utility/cargo bike.
Seems like an easy conversion, just remove the rear seat and add some sort of long rack that would extend from behind the captain seat all the way back over the rear wheel. You could really carry a big object with all that space.
I've got a tandem bike but don't have a stoker. I may consider converting it into this type of cargo bike.

That's been on my to-do list for a year now. I've got the $75 Huffy tandem in the garage, but still no progress on it.
