I am not a doctor, but just questioning from a logical point of view. I have noticed in myself how easy it is to miss the solution to a problem because I have assumed that some things are not relevant when they really are. These are basically seconds to the motions above to visit a neurologist and examine your diet.
In other words, you said, "I eat pretty healthfully." How do you know that? Have you kept records? I know people who say, I'm a vegetarian therefore I eat healthfully. Clearly that is not NECESSARILY true. Do you eat enough? Is it balanced? Are you a "non-fat fanatic" so to speak? Could you have some blind spots or bad information regarding your diet? Maybe you should keep a food log and consult a nutritionist.
Regarding exercise, you do squats. Do you do them properly? Your gym has no trainer. There are proper, and harmful, ways to use this exercise equipment. What kind of schedule or rotation do you have? How much rest do you get? Do you stretch? If I go too long without stretching my back I can get sensations in my legs. Any assumptions you feel yourself making about your exercise regimen should be examined.

I don't know if this thread is too old to have any life left in it. But my initial reaction is that if there were no problems with the old bike, and there are problems with the new one, then the solution is pretty obvious. The Oma is just a thing. No possession is worth getting so hung up on that it interferes with being able to enjoy your life.
As I understand it, Holland is really flat, except for some hills in the South East. Maybe a bike designed and intended for use there isn't the best vehicle to use where it's hilly.
