Jimmy Johns Delivery:Bag, Pannier, or crate?

I just started delivering for Jimmy Johns and have been looking into ways to carry goods. Currently I am using a non-bike specific messenger bag, which can carry 2 or 3 full bags. I am looking into either upgrading in size to a large messenger bag made for cyclists, but I feel that it is restrictive, and very costly for resulting space.

Once I finish putting my other bike back together I'll have a rack I can use. It is this model and has held up well for me. I am considering getting some panniers as an alternative. Preferably weatherproof, but not required as i can find other ways to block my cargo from the elements. If I do, I think a simple bag design would be best, with no pockets or anything. Any suggestions for good panniers of this type would be appreciated. Easy release is nice two, so I could just grab the bag and go inside with it for larger orders.

A third option suggested is to find a way to attach one a mail crate type box to my rack and have a larger platform that can fit our cardboard boxes we use for larger orders (we usually just balance those on the handlebars.)

Any suggestions or ideas for what might work best?

A messenger bag without a cross strap is just a shoulder bag that is pitched as a messenger.

Alternative to panniers once you get the rack, might be Donkeyboxx- essentially a mail crate with a lid that mounts to the side of your rack. You will have to then figure out a way to carry your wares once you get to your destination.
