chris king headset intall
Do I really need the headset press adaptor or can I just flip the press cones to the flat side and be good to go, one cup at a time like the park tools website says?

No because the bearings a recessed to the cup and it might get damaged. Also you want to make sure it goes in straight.

Doesn't having recessed bearings mean if you press it flat then it would only be pressing on the outer shell of the headset cup? I pressed my used King headset with the flat home made "bolt and big washers" setup and has been holding firm for 4 seasons (3kmiles each). I think King just wants your money. I dont know what you mean by "flip the cones" but I just press them all flat : D

I think the CK piece for the head set press,
presses down on the bearing and the sharp finished edge of the frame insert,
simultaneously..
I only have pulled and re installed a threaded CK headset.
On my 1 off touring bike (very long threaded steerer tube)
Given the OP is in Bike Shop saturated Portland, take the bike
to the shop with the proper tools and do it Right.

The CK bearing cartridges aren't removable so you can't install just the cups. I've installed CK headsets using a home made press with washers large enough to cover the outer edges of the cups and used a leather washer under each metal one to further protect the cup edges. It went in fine and worked with no problems.
