I already know what bike that would be, so I'll just post multiple pics of it instead of trying to get away with more than one bike:
It's C&Vness is debatable, but my '95 Fuji Discovery is definitely one of the funnest bikes I've ever ridden. Right now it's stripped down because I had a disc tab added by Banjo Cycles, and I'm still deciding on the components to get. It should be an amazing all around bike once it is together again.

My 1948 Crescent 1-speed bike. Heavy, sturdy, well built, all-weather bike with fenders, luggage rack, a drawer underneath luggage rack for tools/pump/etc., carrying handle on seat tube, and everything on it repairable. Bicycle Repair Man !!!
I usually don't spend much on bicycles and have taken most from shabby and dumpster bound to being rather nice functional machines.
When I told my beautiful amazing wife that I was going to spend $600.00 to buy the Pugsley she thought it was an excellent idea because it is a bike that I will be able to use in the winter (very practical) and as I am building racks will be able to design custom racks to fit the Pugsley and offer those up in addition to others.
I also want to build a step through frame that will handle those fatties as it will allow my wife to ride in the winter and maybe even do some off road riding in the river valley...

Thousands of off road miles, several long distance tours and years of service as my all around bike.
Plus the fact that she was custom built for me, and able to use multiple wheel sizes... it's a no brainer.

If I could only keep one bike, it would definitely be my Rodriguez UTB. It is far from being a C&V bike, although I did give it a few C&V touches. Most importantly, however, it is the most comfortable and versatile bike I have ever owned... touring, commuting, gravel roads, randonneuring, travel bike. LOVE IT!

My Bianchi Volpe, acquired cheap on craigslist. It will soon have a rack or two, fenders, and a dynamo light set.
It has a 21-speed drive train. Handling is very sure but not quick. Climbing is very good, though.
