I just changed my fork for a full carbon disc fork (460g). So moving the bar is much more lighter and sensitive.
This is a titanium cyclocross disc frame that I bought for an indecent price when I was on holiday in Taïwan one year ago. I had the opportunity to visit a small factory that was producing only titanium frames, and got back home with two frames like this in my case. The other one is mounted as a randonneur with mudguards and carradice saddle bag.

Here's my "Stealth Fighter". 1x10 40T w/11-36. All Deore XT drivetrain. It is proving to be very a versatile ride.

I have two bikes I use on gravel, this one is steel with a long wheel base, and as such is quite comfortable. I bought this as a single speed, but built it up myself as a geared bike meant for touring, gravel, paved. It has hand built wheels, DA down tube shifters (lol - I'm under 40--just--but I love down tube shifters! Flawless), and a mix of Shimano parts.

I have two bikes I ride on gravel, both high end steel. (I'm not counting my trail bike, a head-shock Cannondale that is fine on gravel but not very fast or fun).
I have a '97 Rivendell Road, made more gravel friendly with 650 x 38 tires.
And I just finished a drop bar conversion on my '88 Schwinn KOM-10.
I'm really falling in love with the KOM; I rode 50 miles (about 60% gravel) on it yesterday!

I like the styling of the Rivendell.
I find lately I'm so uninterested in the typical carbon bikes put out by so many companies, and so much more interested in finding an older steel bike to stare at. I have four bikes right now, two are steel and the other two aluminum...I just can't see myself buying a carbon go-really-fast bike anytime soon.

Here is my $500 Gravel Grinder. Purchased to run the GAP/C&O Canal Towpath. Have put 3.5K miles on this so far since purchase, most on gravel or dirt.
2009 Focus Arriba cheapo AL hybrid with Shimano 8-speed drivetrain. Easton Carbon bar, Ritchey barends, and my favorite WTB seat are about the only mods I have made.
Also have a bell mounted for Rail-Trail and MUP duty, haha.

Just bought my 1st bike in decades. Came across CX because I didn't want limits and I primarily ride on roads. Got a cheap one, but I love it. Such a good stress reliever.
Jamis Nova Sport. The only change I made so far is the seat. Went with an ISM Adamo. That's it so far... I'd love to do a CX race, if I can get my stamina up more...

the 27 x 1.25 Pasela. Honestly, I don't know of any other quality tires in 27". Paselas, especially the PT/TG ones with puncture protection, would be just fine for gravel.
You may be able to change that bike over to 700c tires, if you could lower the brake pads in their tracks by 4mm each (that's the difference between 27" (630 mm) and 700c (622 mm). With 700c wheels, you'd have a huge tire selection and more tire clearance.
But Paselas would get you going for now.

Thanks for the reply, I'll look into the Paselas. I really don't want to change to 700c on that bike, it's got a nice 40 spoke rear wheel and a matching 36 spoke front. I took it out today, here's a shot from my snack stop.

What could be better than a Brooks saddle,
a couple of Specialized Houffalize CX Cyclocross 700x32 tires
and a gravel road.
I repurposed my C&V Clunker 100 Challenge bike and plan to keep it. It's the only bike I own that can fit 32mm tires. The low gears work great for the gravel roads in southeast Texas.
