Many good suggestions on here, but I'll suggest something from the lower-priced end.
REI has a house brand called Novara and I own two sets of these: https://www.rei.com/product/877885/n...ke-shorts-mens
They have become some of my favorites, even more so than $150 bibs that I own. These cost $55, the chamois feels perfect to me and the white elastic leg bands stay secure while you ride. I've used these in race and long-distance endurance environment. It's generally my go-to for rides 100K or longer. They also are very breathable - I ride them here in South Florida year-round.

I'm a huge fan of DHB from Wiggle. I just picked up some of the race bibs and they are amazing! Considering the price, they are even better. Very true to size.

If anyone's thinking of getting the Giordana Forma Red Carbon bibs:
You may have to size up or two. The compression is A+
My gripe with it is that the bibs sit just right below your belly button. I like mine to sit higher.

OP, if you prefer thinner padding, Performance's Ultra bibs might be for you and the price is right. Check out Pearl Izumi, too. They have a variety of models with different pad thicknesses.

Oooh, the FedEx truck came back to my house!
For starters...medium seems to be the right size...thankfully! Nice tight fit, padding feels good. Not bunching up or anything. Legs are the length I want them to be. Can't wait to get out and ride (tad warm outside right now).

I ordered a pair of Giro Ride bib shorts from Nashbar.. With 30% off the already clearance price, they come to about $56 from originally being $150.

The Giro bibs showed up.. they fit well but I haven't ridden them yet. Couple notes.. the legs are longer than most, ending only 3-4" above the kneecap (and I'm 6'2"). Otherwise of interest, there are 3 pockets on the back (like a jersey but snugger) for hidden storage possibilities. Not sure how I'd use these if wearing a jersey. Also, these are plain black throughout for those wanting to go stealth.

For Assos sizing. I have the newer model bibs, s7 I think. Race fit. I am 5'11". When I got them I was weighing 200lbs. Now down to 177. I notice no difference in fit.
Size large.
Also, just bought a second pair, and there's no difference, so it's not like I stretched them.
