With jeans, I have a 34" waist, 32" inseam, I'm about 6'1".
I wear a large RS bib knicker, fit great.
They are made of very stretchy, gauze-like fabric. They may very well stretch enough for a 36" waist.. no offense.
How long is your inseam? With my 32" jeans inseam, I couldn't imagine wearing the XL's as the crotch would be too low. That's one thing you have to watch with upsizing is the length and proportions.
IMO, try the Large or order both L and XL and return whatever doesn't fit.

My dimensions are close to yours.
30" inseam.
34-36" waist depending on the manufacturer.
A medium fits perfectly. An XL would be a terrible idea.

I'm 6 " 180 pounds and i wear a size medium in the RS fit like a glove. The best pair of bibs i own.

I'd say the large should fit you fine I also wear a 30 inch inseam in a dress pant and 32 for a baggy jean.

I'm 5'11", 170lb and wear a L...I found that to be the most comfortable...even then, at least initially, the elastic around my thighs is quite snug...i just bought a new pair after having a set for a year and the difference is very noticeable. i think technically the chammy's a little on the large side but I have no issues with it
