Most of my rides are in early dark hours and I see lots of deer. Never been hit but I've been real close to them. But also being a hunter I enjoy seeing them. I do stay away from some of the faster descending hills just in case.

My solution in the garden, after many years of anguish and many dollars spent on various contraptions that didn't really work, has been to make a scarecrow out of a steel fence post with a cross beam. I hang a work shirt, sweaty bandana and a hat on it, and they stay away. To them, it looks like a human & smells like a human. Keeps the neighbors away, too.
This to me really demonstrates evolution at work. Birds will do the same thing, happily going about their business as you drive right by them in a car.. get out of the car and away they go... though I must say I've hitten about as many birds as I have deer so to me they actually seem to be smarter at getting out of the way than deer are.

I was going down a hill at ~70kmh when a deer was coming from the right in the woods, he turned around just before me, 2 or 3 meters from the road.

Yup, Climbing on a narrow mountain road where the bushes came down to the edge of the road, two fawns burst from the bushes just a few feet in front of me. The first one made it past my front wheel but I caught the second one directly in its mid section. It went down and I pedaled right over it with both wheels. I stopped, it jumped up and just stared at me, then took off into the brush after its sibling. No damage to me or my bike.

I wasn't so lucky. Several years ago T boned a deer @ ~ 40 mph on a descent through a wooded area near my home. Upon impact I was launched over the deer into a forward roll onto chip seal pavement. First point of contact was the back of my head which split my helmet and caused a concussion (fortunately it was somewhat of a glancing blow given I was continuing to roll forward). Next contact was the back of my shoulder which caused my rotator cuff to tear along with road rash. Base of my back was next along with a hard strike to my elbow which spilt it open to the bone. The base of the back was very painful given I was carrying my blackberry in my back middle pocket and it was crushed between the pavement and my back. Continued to roll forward completing the 360 by rolling back up onto my knees and forearms and skidding to a stop causing severe road rash. Was taken away in an ambulance and spent the next 10 hrs or so in the ER getting countless X rays, Cat scans, stiches etc. and removing dirt, pebbles and debris embedded in my wounds. Was on painkillers for a couple of months due to the tear in my rotator cuff (it became quite apparent why people get hooked on prescription pain killers). Was back on the bike within a month but took quite awhile for the mental trauma to begin to wear off. Still think about it today on every descent through a wooded area or area where there is not a clear view of is beyond the shoulder of the road.

Coming down a long fast hill in the very rural part of No. Calif. I nearly overtook a turkey vulture trying to take off from standing, right in the middle of the road. I came up fast right behind it, within a couple of feet. I though the thing would have gained some altitude before I could get that close, but it's a very big bird with lots of inertia to overcome. I came up so fast right behind it's path of flight I nearly had to put on the brakes. Boy was I startled! The damn thing stunk; it smelled like rotten meat.

I see a lot of deer in my area, mostly on the back roads. The closest I've come to hitting one was a few weeks ago on Atsion Road. I was cruising along at 23-24mph when I startled two deer that were in the trees just to my right. They ran out across the road, one right in front of me and one behind me...scared the crap out of me.

I had one run beside me right on my street (suburbia) on Saturday morning. It came from between two houses, ran alongside me for a few seconds, then darted off into a neighbor's back yard. We have way too many deer around here.
