Length and routing. Ideally, there should be just enough to turn the bars and no more. Its normal for OEM bikes to run a bit long for adjustments but that is excessive IMO. You can read more about it...

That's a nice looking bike. But the person who assembled it knows or cares nothing about proper cabling. Once you get your fit dialed and you have some time, I'd suggest taking it back to the shop...

It looks like the brake levers are upside down as well. The stem and bar was installed upside down. You can flip the stem, but flip only the stem.

Great job, beautiful chainguard and well curated parts overall. Mixte + cantis look versatile. I built two nice city bikes (1 mixte, 1 MTB) for my wife but she doesn't ride them very much.

FWIW I'm not a fan of ergo grips, but yours seem to be angled wrong and they are very angle dependent.

I use the full range, all my gears are useful. I might go a bit lower up front though. I am not powerful and spin down hills also

These are nice bikes. I've always like the old Cannondales. They never made low end frames, the low end models had cheaper parts than the competition to compensate, but they were well curated.
