Schwinn Hierarchy
In my reading here I have figured out that a Schwinn Paramount is the top dog for Schwinns, How do you rate the rest
Varsity, Continental, etc.
and what years are considered good.

It very much depends on the year you have specifically in mind. For instance:
1963: Paramount, Superior, Continental, Varsity
1966: Paramount, Super Sport, Continental, Varsity, Collegiate
1974: Paramount, World Voyageur (Japan made) Sports Tourer, Super Sport, LeTour (Japan made), Continental, Suburban, Varsity, Collegiate
Check this link for assistance for each year between 1960-79.

Late 1930s and 1940s Light Weights:
Paramount- Superior- New World
You also find hybrids of the bikes with better components. It seems you could order bikes with varying parts to create an "in between" type thing, if you wanted.

I have an '88 Prologue. My understanding is that it is a higher end road bike, just under the Paramount.

edited to add: It appears Prologue was later 80s and Peloton was a few years earlier.

If your Prologue is original, it came in either red and white, or gray and black. No orange.

The fillet-brazed Super Sport last appeared in the '73 catalog, however Schwinn actually continued building and selling them in '74 until they ran out of frames. The remaining leftover frame parts were made into frames (with no serial numbers) and bikes in '77 as the "Sport Limited". The Super Sport name then reappeared in '81 on a lugged frame touring model.

I have a an 87 Paramount with SL/SP tubing and a modern Soma Smoothie with Tange Prestige. My experience is that the Soma is a more compliant ride, like butter it is so smooth on the road, yet still responsive. My Schwinn is more rigid, stiffer in the BB even though it is considerably older but feels quicker accelerating. Both are great bikes and I really enjoy riding one after I have been riding the other for a while because each gives a different riding experience.
Here is an article I found exploring this exact question, I don't know whether there would be a difference in my modern Tange tubes and those on the bike tested for the article.
https://www.bgcycles.com/frame-tubing-selection.html
Here also is a less useful thread I started a while back on the subject which lead to me discovering the above article (I misstate in the thread that my Schwinn is 86 when it is in fact 87 but that doesn't effect tubing anyway).

it should also be mentioned that if the bike is in great condition - most schwinns models gain interest from some segment of their dedicated enthusiast base
mostly due to their americonic style
me peronsally i have owned and ridden several and enjoyed them all
